High Quality Japanese Laminated Steel Blade The blade made of top quality Japanese carbon steel (Hitachi Aogami Blue Paper Steel No.2). The HRC 62-64 hardened blade is incredibly sharp and long-lasting, allowing you to shave silky-smooth fresh bonito flakes without destroying the bonito fibers. Also, the blade steel is hand forged and laminated with soft iron by skilled Japanese blacksmiths, and it makes the blade stronger and easier to sharpen than a mono steel blade. 2. Beautiful Oil Finished Red Oak Body The body is made of quality Japanese red oak and Japanese ebony. Professional woodcraftsman finished it with oil. You can enjoy not only the comfort of touch but also the beauty of appearance. *The blade is Japanese carbon steel with excellent sharpness and is easy to rust. If the blade is not used for a long time, wipe it with Knife Oil and store it. 3. Good Design Award Unlike the traditional Kezuriki with a drawer, the bridge-shaped body allows you to place your food down and pour fresh katsuobushi directly on it. Its lightweight and easy-to-handle design won a Good Design Award in Japan. How to adjust the blade (English instruction is included for more detail) Insert the blade Tap the head of the blade with a hammer (Genno) or wooden mallet. Appropriate hammer size: Hammer: 8-16 oz headMallet: 36-55 mm head Retract or remove the blade Tap the left and right of the wood body edge alternately parallel to the blade angle. Tuning the blade edge Turn the body upside down and tune the amount of the blade edge. Tips The thinner you shave, the quicker you can make a flavor DASHI soup stock. If you want to make a clear-colored soup, shave it thinly as well. Blade Maintenance Tips Kezuriki needs blade sharpening when the blade gets dull. You can shave thinner and more fragrant Katsuobushi bonito flakes using a sharp blade. Using KAKURI honing jig, even beginners can easily and quickly sharpen the blade. Besides Kezuriki, it can also be used to sharpen the blades of Japanese wood planes and chisels. Compatible blade width: 3 - 70 mm For daily sharpening, use a sharpening stone of about #1000 grit, and for sharper cutting, change the stone step by step from #2000 to #10000 If the blade is chipped or badly rusted, you can repair it by using a rough whetstone of about #400.
